Ingredients
For the pastry cream:
– 1 egg
– 50 g sugar
– 10 g vanilla sugar
– 15 g cornflour
– 250 ml milk
For the preparation:
– 2 eggs
– 100 g sugar
– A pinch of salt
– 100 ml milk
– 50 ml vegetable oil
– 170 g flour
– 1 teaspoon baking powder
– 50 g chopped almonds
For the topping:
– 50 g flaked almonds
– Icing sugar for dusting

1. Prepare the pastry cream:
– In a saucepan, mix 1 egg, 50 g of sugar, 10 g of vanilla sugar and 15 g of cornflour. Gradually add 250 ml of milk.
– Cook over medium-high heat, stirring constantly until thickened.
– Remove from heat and let cool to room temperature.
2. Prepare the cake batter:
– In a large bowl, beat 2 eggs with 100g of sugar and a pinch of salt until frothy. Beat for 3-4 minutes.
– Stir in 100ml of milk and 50ml of vegetable oil. –
Sift 170g of flour and 1 tsp of baking powder, then gently fold in until smooth.
– Add 50g of chopped almonds.
3. Assemble the cake:
– Preheat the oven to 170°C and line a 27 x 18cm baking tray with baking paper. – Pour the batter into the tin and smooth evenly.
– Sprinkle the surface with 50g of flaked almonds.
– Transfer the cooled pastry cream to a piping bag and pipe lines in a grid pattern onto the cake.
4. Bake:
– Bake in a preheated oven for 40 minutes, or until a toothpick inserted in the center comes out clean.
