Pasta (penne or rigatoni) 350 g
Sliced Italian sausage 450g
Sliced mushrooms 225 g
Olive oil 2 tablespoons
1 small diced onion
Chopped garlic 3 cloves
Heavy cream 250 ml
Chicken broth 250 ml
Grated Parmesan 250 ml
Grated mozzarella 250 ml
Salt and pepper (to taste)
Dried oregano 1 teaspoon
Dried thyme 1 teaspoon
60 ml chopped fresh parsley

Step 1: Prepare and cook the pasta: Preheat your oven to 190°C (375°F). Cook the pasta al dente according to the package instructions. Drain and set aside.
Step 2: Cook the sausages and vegetables: In a large skillet, heat the olive oil over medium heat. Add the sliced Italian sausage and brown. Remove the sausage and set aside. In the same skillet, add the sliced onion and brown. Add the garlic and sliced mushrooms, and cook until the mushrooms are tender.

Sauce preparation: Stir in the heavy cream and chicken broth. Simmer for a few minutes until the mixture thickens slightly. Stir in the Parmesan cheese, oregano, thyme, salt, and pepper.
Step 4: Mix and cook: Return the cooked pasta and browned sausage to the pan, mixing everything together. Transfer the pasta mixture to a greased baking dish. Top with shredded mozzarella cheese.
Step 5: Topping and Serving: Bake in a preheated oven for 20 to 25 minutes, or until the cheese is melted and golden brown. Remove from the oven and let cool for a few minutes. Garnish with fresh parsley before serving.
