1 small onion, finely chopped
1 small red bell pepper, diced
1 small green bell pepper, diced
2 garlic cloves, minced
1/2 teaspoon salt

1/2 cup tomato paste
1/2 cup peas (optional)
For the potato layer:
4 to 5 medium potatoes, cooked and sliced
1/2 teaspoon salt
1/2 teaspoon black pepper
For the cheese sauce:
250ml milk or cream
1 tablespoon butter
1 tablespoon flour
1/2 teaspoon garlic powder
1/2 teaspoon black pepper
1/2 teaspoon Dried basil (optional)
1/2 cup shredded cheese (cheddar, mozzarella, or a blend)
For the topping:
6 to 8 slices of cheese (cheddar, mozzarella, or Swiss)
1/2 cup shredded cheese (to enhance the flavor of the gratin)
1 tablespoon chopped fresh parsley (for garnish)
