Now this is my absolute favorite, the “Olenka” salad – I tried it for guests and it instantly became my favorite dish.

Tip: Choose a milder yellow cheese or Emmental cheese so that the flavor does not dominate the other ingredients.

 

‍How to prepare – step by step:

1️⃣First layer – cheese

I start with the hard cheese – I grate it on a fine grater and spread it evenly as the first layer. On top, I make a light mesh of mayonnaise , without overdoing it.

 

2️⃣Second layer – chicken fillet

I cut the cooked chicken fillet into small cubes. I season it lightly with salt and pepper, then add a little mayonnaise and spread it over the cheese.

 

3️⃣Third layer – carrot and garlic

I finely grate the carrots. In a separate bowl, I mix it with the pressed garlic and a little mayonnaise. This mixture gives freshness and a slight spicy accent. I distribute it as the next layer and again lightly add mayonnaise.

 

4️⃣Fourth layer – proteins

I separate the eggs into whites and yolks. I grate the whites, arrange them in a layer, and put some mayonnaise on top again.

 

5️⃣Final finishing touch – yolks

Finally, I generously sprinkle the salad with grated egg yolks. They give it a finished, appetizing appearance and a delicate flavor.
